Product Information

Tartaric acid is a white, almost crystalline powder that turns part of the sucrose in a sugar syrup into invert sugar.

A 500g tub goes a long way, since sugar work only ever calls for a few drops of acid at a time.

What Does Tartaric Acid Do in Sugar Work?

Cooked sugar wants to set hard and brittle. Once the acid has converted some of the sucrose into invert sugar, the mass becomes more pliable and much easier to work with. That gives you longer to pull, shape or blow it before it sets.

How to Use Tartaric Acid

It dissolves in water and in alcohol, so make it up as a solution before you need it rather than adding the dry powder to the pan. Measure the drops carefully and keep to the same amount every time, because too much acid can leave the sugar too soft to hold its shape. If you would rather buy invert sugar ready-made, our Belgosuc invert sugar paste sits in the same range.

Recipes and Applications

Tartaric acid earns its place wherever sugar has to be shaped by hand:

Pulled sugar ribbons and bows
Blown sugar fruit and figures
Sugar flowers for showpieces and cake toppers
