Chocolate Sticks

Chocolate sticks, also called batons, are bars of bake-stable chocolate made to go inside croissants, pains au chocolat and other laminated pastries. They hold their shape through proving and baking, so each pastry gets a defined chocolate centre rather than chocolate that melts away into the dough.
