Chocolate Shavings

Chocolate shavings are flakes of shaved chocolate for decorating cakes, pastries, desserts, ice cream and hot chocolate. Compared with curls or blossoms they look more rustic and textured, which gives the finished product a handmade look and feel. Choose milk, white or dark, as flat shavings or as spring shavings.

Which Chocolate Shavings Should I Choose?

Callebaut makes milk, white and dark shavings, with minimum cocoa solids of 28.1%, 22.5% and 48% respectively, and Vanova offers a milk chocolate shaving at 35.5%. Spring Shavings come in dark from Mona Lisa and in milk and white from Callebaut, so you can mix two or three colours on a single dessert.

Where Can I Use Chocolate Shavings?

Scatter them over a gateau or cheesecake, press them onto the side of a cake, or sprinkle them on ice cream and hot chocolate. They suit a classic patisserie finish just as well as a homely traybake.
