What Is Pure Vanilla Powder? 

Pure vanilla powder is the pod itself, seeds and skin together. These whole cured pods are ground cryogenically, at very low temperature, into a powder finer than half a millimetre, brown to light brown in colour, with a vanillin content of 1.5 to 2%. The label lists one ingredient, Madagascan vanilla pods, with no colourings, preservatives, sugars or carriers.

How to Use Vanilla Powder 

As a guide, about 2g of powder does the work of one vanilla pod, so it swaps easily into any recipe written for pods. Sift it with the flour for sponges, shortbread and macaron shells, stir it into melted chocolate or a ganache, or whisk it into cream before whipping. A pinch mixed through icing sugar makes a quick vanilla dusting for doughnuts and madeleines. Close the lid tightly after use and store the powder at room temperature, away from light and strong smells.
