Vanifusion puts every part of the vanilla bean into one spoonable paste, so you get the flavour of an infused bean in a single step. Stir it straight into a ganache, a cream or a batter, with no splitting, scraping or steeping.

It is a thick brown paste, flecked with black seeds, made from Madagascan Bourbon vanilla at 400g of beans for every kilo.

What Is Vanilla Bean Paste? 

A vanilla bean paste combines vanilla flavour and real seeds in a sweet base that is easy to measure. Norohy developed Vanifusion with pastry chefs around four parts of the bean: vanilla concentrate (15%) for a full, rounded vanilla flavour, ground vanilla beans (11%) for woody depth, exhausted seeds for the speckle, and cane sugar to make it easy to weigh. That cane sugar is the difference between Vanifusion and our Vakana paste, which has no added sugar.

How to Use Vanilla Bean Paste 

Use 5 to 12g for every kilo of mix, depending on how strong you want the vanilla. Norohy put 5g of paste level with about 3g of vanilla beans, which helps when you are converting a recipe written for beans. Whisk it into a crème anglaise as it thickens, stir it through a ganache once the cream and chocolate have come together, or beat it into a buttercream at the end.
