Ground cinnamon clouds a syrup and leaves specks through a smooth filling. Cinnamon Spice Drops give the same spice as a liquid: two drops match an eighth of a teaspoon of ground cinnamon, or a quarter-inch piece of stick.

Our drops are 30% cinnamon extract, carried in an emulsifier that spreads the flavour evenly through both water and fat. That means one bottle covers a coffee syrup, an apple filling, a bun dough and a ganache, with nothing to sieve out and no stick to fish from the pan.

How to Use Cinnamon Spice Drops 

Convert as you go. Wherever a method asks for ground cinnamon, use two drops per eighth of a teaspoon; where it asks for a stick, two drops per quarter inch. Add them with the wet ingredients in cakes, cookies and enriched doughs, fold them into apple or pear fillings before baking, or mix them into a sugar syrup to brush over buns. For a hot drink, one drop in the cup is a sensible first test. Close the cap firmly after use and store the bottle cool and dry, away from direct sunlight, where it keeps for up to three years.
