A Sweet Five-Minute Q&A with Paul North, No. 12 Chocolatier

It’s owned by Paul North, a self-taught chocolatier who began his journey after attending just a half-day chocolate-making course. That short introduction sparked a passion, and over the past seven years, Paul has honed his craft into something truly special. From hand-crafted truffles to beautifully packaged bars, his creations reflect both dedication and love for the art of chocolate.

Can you share the journey that led you to where you are today in your career?

“I started out as a surveyor, traveling up and down the country. But a significant life change that affected my health pushed me to consider a new path. I ended up studying accounting at Lincoln College and worked briefly as an account’s technician.

Then, in 2013, while at a summer fair, I saw someone selling traditional sweets to a queue of customers—it sparked something in me. That led to selling sweets at a local market. I then took a half-day course in chocolate-making which I absolutely loved. From there, I began experimenting at home, buying different moulds and learning as I went. Then running my business from my garage, things started to really pick up. My wife Lynne had always dreamed of running a shop, and we hoped to find a place we could both live in and run as a business. In December 2017, that dream came true. Lynne, our daughter Stacey, and I opened No. 12 Chocolate in Kirton in Lindsey —a beautiful shop that is also our home.

Seven years later, my love for chocolate is still going strong.”

What brings you the most joy in your work as a chocolatier?

“The real joy for me comes from seeing people enjoy what I have created. Hearing amazing feedback makes it all worthwhile—it is a sign that I am doing something right. In 2013, I won a Great Taste Award for my salted caramel bonbons, which was a huge milestone in my career!”

What is your top advice for someone just starting out in the chocolate industry?

“To keep things simple. I have seven years in the game, and I wouldn’t change a thing. My advice is to start small, understand your market, and avoid overcomplicating things. Attend events, sample your product, and let people experience your chocolate.”

Where do you draw your inspiration from when creating new chocolate creations?

“I draw inspiration from a wide range of sources. I like to read books, for example, Paul A. Young and Chocolatier Kitchen, as well as platforms like YouTube and Instagram. By exploring different channels, I can then combine ideas and create something unique, always striving to put my own spin on every creation.”

Paul’s chocolates stand out because of his open-minded and playful approach to making them. It’s a mindset we truly value at Keylink—creativity, curiosity, and a sense of community are at the heart of everything we do.

What is your most popular bonbon flavour?

“Without question, my Salted Caramel Bonbon stands out as the top choice. However, the Cappuccino Bonbon is quickly becoming more and more popular.”
