Mexican Single Origin Chocolate

Mexican single origin chocolate is couverture made with cocoa grown in Mexico, where cacao was first domesticated. Most Mexican cocoa now grows in Tabasco, around eighty per cent of the national crop, with Chiapas second. We stock Cacao Barry's Mexique 66%, a dark couverture blending Mexican Forastero and Criollo beans.

Is This the Same as Mexican Drinking Chocolate?

No. Traditional Mexican table chocolate is the coarse, cinnamon spiced disc whisked into hot milk, and we don't sell that. Mexique is a single origin couverture for professional chocolate work.

What Does Mexique 66% Taste Like?

The Criollo in the blend lifts it: a slight opening acidity, then spicy and fruity notes with undertones of gingerbread and liquorice, and a warm coppery colour to match. Even the word cacao traces back to the Mixe-Zoque language of the Olmec.
