Why choose alcohol concentrates 

An alcohol concentrate not only provides longer shelf life when mixed with your application, but also imparts the flavour of your chosen concentrate, giving you warming, spicy notes whilst getting the added benefit of extended shelf life. 

A splash of rum turns a plain sponge into a rum baba and a simple ganache into a rum truffle, and Rum Iles du Vent is the everyday rum for exactly that kind of work. Getting the Most From Your Rum 

The strength does the work here. A 40% rum brings more water into a recipe for the same flavour, and in a ganache that water loosens the set and shortens the shelf life. At 54% vol, use roughly three-quarters as much as a recipe gives for a 40% rum as your starting point, and adjust to taste from there. Its sugar content is just 0.1g per 100ml, so it won't tip the balance of a sweet recipe either.

Timing matters too. Add it after a ganache or caramel has started to cool, and stir it into a soaking syrup after the syrup comes off the boil, so the rum doesn't cook away before it reaches the sponge. For a rum and raisin filling, soak the raisins in the rum first so they plump up.
