This product is repacked in a facility that handles nuts, peanuts, gluten (Including cereals containing gluten), egg, soya, milk and sulphites.

With a mouthwatering lemon curd-like flavour, our lemon coating offers all the benefits of a traditional compound coating, with the addition of a classic citrusy taste! Perfect for drizzling over lemon cakes and muffins, traybakes, blondies, and so much more. This fabulously versatile coating can simply be melted using your preferred method and then used straight away to dip, coat and decorate. Then, just allow to harden to a matte finish before displaying or serving.

 

Applications 

Bakery & Patisserie 
  • Enrobe or dip your baked goods – Once you’ve melted the coating, you can dip or enrobe your baked goods. Once set, these can be displayed and ready for sale!
  • Layer on a traybake – Finish your rocky road with drizzle and ripple or close your traybake with a layer of lemon compound coating. Try piping it over a lemon drizzle cake!
  • Decorate pastries and desserts - Drizzle over croissants and cheesecake for a delicious lemon flavour in every bite. 
  • Flavour your baked goods - melt and add to your mixture to give your products a delicious lemon flavour and light yellow colour.

 

How to Use Flavoured Compound Coating

Working Temperature

The optimal temperature for this product is 48-50°C. It is important not to heat the product above 55°C to avoid burning the compound.

Fluidity

For increased fluidity, the compound may be tempered by adding fully hydrogenated lauric palm oil at a concentration of 3-10% during melting. For most applications a concentration of 7% is recommended.

Shell Thickness

For a thinner layer of compound on a dipped or enrobed product, an emulsifier such as polyglycerol polyricinoleate (PGPR) E476 may be added to the product during melting.

 

Troubleshooting
  • Compound coating has streaks on the surface – When used in any applications where visible, the product should be immediately put in the fridge, as the compound coating needs to be shock cooled.

UK Highlands/Islands and Republic of Ireland

  • Orders placed before 3pm Mon-Fri will be dispatched the same day
  • Orders will be dispatched on a 2 day service
  • Delivery will be charged as a percentage of the order value, subject to a minimum delivery charge per order.

Palleted deliveries

  • If your order is large enough for a pallet, we may give you a quick call to ask if you’re able to accept them. Pallet Track can make sure pallets are delivered right to your door, but we do understand that not everyone is able to receive them.
  • Orders placed before 1pm Mon-Fri will be dispatched the same day
  • There is no extra charge for palleted deliveries
